Job summary

Our client is a well-known luxury restaurant in Hanoi looking for an Executive Sous Chef

Job Responsibilities

  • Assist the Executive Chef in menu compilation and possess an in-depth knowledge of the full menu; initiate new recipe/ produce to enhance guest satisfaction;
  • Supervise service ensuring food preparation, presentation & taste are compliant with restaurant standards before serving;
  • Ensure the freshness and hygiene of food; ensure merchandise is of sufficient quality and quantity up to the restaurant demand and function forecasts;
  • Running of the kitchen on a day-to-day basis in the absence of the Executive Chef;
  • Train, coach and develop a successful and enthusiastic team of associates, and motivate staff members to maintain an efficient job performance;
  • Adhere to all fire and safety regulations, make sure the hygiene and food safety standards are met in all stages of food preparation;
  • Maintain Food safety and hygiene (HACCP) in working place all the time.

Experience requirements

  • Certificate in culinary arts & food processing;
  • Based in Hanoi
  • Have at least 03-05 years of previous experience working in a similar role. Prefer the candidates have experience in Restaurants, Hotel or Cruises;
  • Experienced in both Western and Eastern food (Must)
  • Physical strength and stamina to spend long hours standing and performing repetitive motions;
  • Willing to work in split shift and flexible hours: evenings, weekends and holidays;
  • Having strong knowledge about HACCP
  • English requirement: Good communication in English is an advantage;
  • Good at management and administration, proficient computer skills;
  • Good communication skill, truthful, cheerful, open-minded, positive thinking;
  • Time management skills to deliver orders on schedule and avoiding wasting food;
  • Organizing and leadership skills;
  • Ability to work under stress;
  • Being able to solve problems effectively.

Education requirements

  • A college degree is preferred. Bachelor of Science degree in hotel/restaurant management or Tourism & Hospitality is desirable.
